Sausage-stuffed Mushrooms

Makes about 24 large mushrooms

Ingredients: 

  • 1lb large mushrooms, white or porcini if available 
  • 1lb mild Italian sausage, removed from casings
  • 1stick butter, melted
  • 1/2c Italian seasoned breadcrumbs
  • 1/4c Italian flat-leaf parsley, chopped 
  • 1/4c finely grated Parmesan cheese
  • 2 cloves garlic, minced

Directions: 

  • In a pan over medium high heat, cook sausage, breaking up until Brown and crumbly. Let cool while you prepare the other ingredients.
  • Melt butter and let it cool slightly. 
  • Prepare your mushrooms— wipe any dirt off of them and remove stems—Reserved stems are to be used in filling. 
  • Place a sheet of parchment on a baking sheet and preheat your oven to 400°
  • Mince mushroom stems and add to a bowl with the cooled sausage, breadcrumbs, parsley, Parmesan and garlic. Pour the melted butter over and mix until evenly incorporated. 
  • Scoop stuffing mixture into each mushroom  
  • Bake for about 20min, or until Brown and bubbly. 
  • Remove from oven and serve.
